Amaranth is a pseudo - cereal crop native to South America, where it has been a staple food of the Incas for many millennia. The healing properties of amaranth have been known since ancient times. The warriors took amaranth grains with them on heavy campaigns as a source of strength and health. It is characterized by a high content of easily digestible protein, the most important essential amino acid - lysine, vitamins A, B, E and D, polyunsaturated fatty acids, iron, phosphorus, potassium, calcium, pectin, phospholipids and phytosterols. The balance of essential amino acids in amaranth protein is close to the standard recommended by the FAO (UN Agricultural Organization). Squalene in amaranth is a powerful antioxidant. It is able to increase the strength of the immune system several times, providing the body's resistance to various diseases and antitumor protection. Amaranth is widely used in cooking and gives dishes an exquisite nutty taste. It is an excellent side dish, ideal for adding to soups, salads, stewed vegetables.
